High-end luxury has yet to make a big inroad in Ethiopia. Outside of Addis Ababa, you may get patchy Wi-Fi (the government tends to switch the internet off from time to time), bumpy rides and restaurants where many of the choices on the menu are unavailable. But don’t let this deter you. This is perhaps the most intriguing country in Africa. A place of scale, biblical beauty, canyons and chasms. Of historical treasures aplenty. It’s like disappearing down the best of rabbit holes and arriving at a Scottish baronial version of the Mad Hatter’s Tea Party. The skew-whiff clipped topiary on the sloping lawn looks as if it’s been cut by a drunken gardener or the March Hare; the 240-acre estate is dotted with water-sprouting mermaids, characters from Robert Burns, Robert Burns himself and Ossian, the mythical Scottish Bard. The Queen of Hearts must have shouted, “Off with their heads” because there are decapitated heads (AKA stone busts) on the garden walls.

Ethiopian Airlines – flying on cloud 9

Cloud 9. That’s the business class cabin of Ethiopian Airlines. The one in the A350. This is where you want to be when you leave the tarmac to head for Addis Ababa, Ethiopia. It’s the first Airbus A350 to fly long-haul out of Heathrow. And the first to fly in African skies. Let’s start at the beginning. The airline shares a lounge with United at Heathrow. But if you’re flying from Addis Ababa, they have their own own dedicated space – with bar, children’s area, business centre and even an Ethiopian coffee corner.

Postcard from Oyster Bay Hotel, Dar es Salaam, and Zanzibar

Dar es Salaam, Tanzania, is one of those places dubbed a ‘hole’. It’s neither particularly old, nor particularly beautiful. But read on because now there’s a reason to visit: the Oyster Bay Hotel. Renovated in 2007, the hotel is particularly beautiful. It’s also one of the coolest overnight stops in Africa for in-transit honeymooners and those who are en-route, whether to the high snows of Kilimanjaro, the coral sands and historical sights of Zanzibar, the Rift Valley or the Serengeti with its annual migration of two million animals.

I’m sped from the airport by a James Bond-style driver dressed all in black. He plays New Age dolphin music, the sort that normally goes with massages and crystals. Is he getting me into the mood for the Sha Wellness Spa, the world’s first five-star macrobiotic spa, on the 50 minute drive from Valencia, Spain? Soon the spa looms like an ocean liner stranded among the Sierra Helada mountains, with the Lego tower blocks of Benidorm in the distance.

This is a cool, modern house in which to bring together all generations of your family for a weekend shindig. Party central is near Stawley, Somerset. It’s a converted 16th-century dairy farm-turned-cider press that is now glossy-interiors-mag-feature-meets-heaven. There’s a 25-metre living/dining/playing space, another barn-turned-games room with a roaring fire in a monumental contemporary fireplace, acres of bleached wood floors and under-floor heating.

Where to eat in Edinburgh

Where offers the best dining experiences and ingredients north of the border? Edinburgh. It’s renowned for its fine food scene. If Michelin accolades are your thing, then the city is home to four restaurants with a star. But if the prissiness of such eateries is not your bag, then there are few places better for unpretentious fare than Fhior, which opened last year. Fhior lives up to its name, which means ‘true’ in Gaellic. It offers an excellent and interesting modern Scottish menu with Nordic overtones. Everything’s super fresh, seasonal and local and the chef, Scott Smith, is big on the use of unusual herbs such as nasturtium capers (made from nasturtium seeds) and sweet cicely.
